Amazon.com Review
Henckels is acknowledged as one of the world's finest cutlery manufacturers of high-end knives. Henckels developed its International line, featuring knives that still perform admirably in the kitchen, for a more moderate price. This seven-piece Classic set is manufactured using high-carbon stainless steel, a premium material, but one that's of slightly lesser quality than the company's other cutlery lines. The knives are well balanced in the hand, with narrow yet still heavy handles for thorough slicing. The set includes a 4-inch paring knife, a 5-inch serrated utility knife, a 7-inch hollow-edge santoku, and an 8-inch chef's knife. A 9-inch sharpening steel keeps their edges in order, and a pair of kitchen shears to snip herbs, flowers, or string is also included. Everything stores neatly in an attractive natural hardwood block. The variety of knives gives you an arsenal to handle virtually any kitchen task, from slicing vegetables and meat to mincing garlic to dividing a long loaf of French bread. Durable and attractive, the knives feature Henckels' trademark black polypropylene handles, each fastened by three rivets to the fully visible tang. While the knives are dishwasher-safe, hand washing is recommended. Like all Henckels knives, this cutlery set carries a lifetime warranty. --Rivers Janssen

Customer Reviews

All the quality at half the price5
Okay, so they are made in Spain rather than Germany...so what? These knives are a great starter set for anyone looking to "upgrade" from the dull knives they got as a hand-me-down or when they went off to college.

Chefs say that a safe knife is a sharp knife, and you just can't get that with inferior knives. This line by Henckels probably gets overlooked because you don't find it on the shelves of Williams-Sonoma, but they are just as good. Cutting is also faster with a well-balanced knife with some weight behind it, which this set has as well. I've added kitchen shears since I bought mine, and I'll probably add the utility knife, carving set and cleaver before I'm done. The knives you start with though are all you need. I find myself using just about all of them (except the boning knife) almost every day.

Two caveats though...don't put them in the dishwasher and don't forget to use the steel either before or after you use your knives. My sister put her knives (not Henckels, but of similiar quality) in the dishwasher on a consistant basis and the edges got nicked from all the banging around that goes on. Also, using the steel will keep you from having to have the knives professionally sharpened.

Great knives for the amateur chef5
I bought this block set to replace my Chicago Cutlery chef's knife and paring knife, which I've owned for years. The Henckels are excellently balanced and construction is solid. Out of the box, they are not the sharpest knives ever. However, they're likely to be sharper than the knives they're replacing, and if you get them sharpened, they'll hold an edge with good maintenance. I've used every blade in the set and have been satisfied with them all. I have some slight discoloration of the blades, but nothing too terrible. I've been hand-washing them religiously, but a friend has the same set and tosses them in the dishwasher, and his knives have held up better than mine.

Con:
1. Not the sharpest knives ever.
2. Require significant maintenance.
3. Shears should be included in this set.

Pro:
1. Excellent balance, highly functional.
2. All the basic blades are included.
3. They hold an edge well.
4. Block is utterly functional.
5. You will never be able to buy cheap knives again.

Overall, this block set was a fantastic investment. I'd recommend it to anyone getting into cooking. If you're a professional, you'll probably want something better (there are better Henckels, and Wustof too). If you don't cook much at all, this set is probably overkill.

Almost, if not just good as the Wusthof Classic4
I have owned an overgrown set of these knives for about 4 years now and waited until I had significant use and comparison to write this review. I also own similar knives in Wusthof Classic and will compare directly. This review has been copied from other Henckels International Classic Reviews I wrote and has been modified slightly for the particular item being reviewed although I left comments about the other knives in.

Disclaimer: I enjoy sharpening knives so edge retention is rarely an issue for me as I probably sharpen even my best knives too much. Besides stone sharpening every 6 months or so, I also steel my knives just about every time I use them.

The bottome line: I really love this set of knives (although I got one dud in the bunch; the only reason I am not giving this line a 5 rating). The edges are almost if not just as good as the more expensive knives but the finish is lacking (although only somewhat). Relatively great value. I did not feel like these knives were very sharp out of the box but they take a scary edge quite easily and keep it for a long time (many, many months with regular steeling and home use).

8 Inch Chef: This is a very nice knife if you can get over the fact that the finish is not as nice as the higher end stuff. By this I mean that the edges on the handle and bolster are sharper than they are on my Wusthof Classic. It takes and holds an edge well. I also own a Wusthof 8 inch chefs knife and feel like this one takes just as sharp of an edge. I have yet to determine a difference in edge retention between the two lines, so that means they are at least comparible. As much as I thought I would be enamored with the wusthof, I really don't believe that the additional cost is worth the small amount of performance gain you might get by buying the Wusthof. In truth, I still enjoy using the Henckels International Chef's knife just as much as the Wusthof. The heft is wonderful and the curvature of the blade is ideal for chopping. I really like how the point is taperd to a very thin blade. Finish aside, this is right up there with the best of them and allows the user to slice with the point quite effectively.

6 Inch Chef: My wife swears by this knife and it is consistantly one of the sharpest we own. For some reason (perhaps the thinner blade), it holds its edge like the sharp little devil it is. This knife is a true pleasure to own and use. It is very effective and feels wonderful in my hand. I may be becoming a knife snob, but I see no reason to buy any other 6 inch chef's knife, as all you would be getting is a fancier name and smoother edges along the handle and bolster. We reach for this one multiple times each day and it retains its edge far better than expected for the price.

4 inch parer: I don't like this one as much as my Wusthof parers but my wife likes it much better. It is always the one she reaches for (many times per day). I personaly prefer the thinness and flexibility of the wusthof parer blades. This one is quite rigid and although it is very sharp, it does not seem to be as sharp as the thinner wusthof parers, nor does it hold its edge as long. On the other hand, its size is perfect for a parer, coming in at the sweet spot between the 3.5 inch wusthof and 4.5 inch wusthof parers I compare it to. I would love to own a 4 inch wusthof parer. Aditionally, the diminished depth of the blade is probably preferable to the deeper wusthof parer blades for tasks such as peeling toward you. I bought one of these for my mother and it is a good test for edge retention as she rarely sharpens and never steels. [...].

6 inch utility: I do not use this knife much. It seems to be quite redundant with my 4.5 inch Wusthof parer (which also does not see much use) or my favorite boning knife (a beat up and resurected chicago cutlery 5 inch utility that is scary sharp and a joy to use). In truth, almost every task in my kitchen is done quite well with either a parer or a chef's knife. I really don't see much use for a 6 inch utility. That said, this knife is sharp and pleasureable to use. Still, on this one, I would prefer a thinner and perhaps more flexible blade. It is quite rigid and that makes me not want to use it as much. For sandwiches, cheese, tomatoes, etc. it is quite appropriate, but I would still probably prefer my 6 inch or even 8 inch chefs knives for such tasks as they are thinner at the edge and therefore seem much sharper.

Bread knife: Aside from the fact that this would benefit from a longer blade, this is as effective as any other we have tried. You don't have to have a bread knife this nice, but this one certainly does the job well.

Boning knife: I have honestly never used this knife on more than a trial basis. It just does not stack up to my older chicago cutlery boning/utility knife. You can't really compare the two, however, since one is very flexible and thin(CC) and the other is very rigid and thick(HIC). I strongly prefer a thin, flexible boning knife. The finish on this knife was horrible in my particular set. It was rounded (not supposed to be) on the end and the blade had not been sharpened at the point, leaving a rounded and blunt tip (exactly the opposite of what you want in a good boning knife). I have never been able to get the point to where I want it. I am certain that I just have a lemon and will try to return it if possible.

So overall, I love these knives. Between myself and my wife, they get just as much use as my Wusthof Classics. Unless finish is critical to you or you like to have other people know that you spent a lot of money, do your pocketbook a favor. I think these knives are just as good for much less money.

J.A. Henckels Twin Pro-S 18-Piece Block Set

Product Description

J.A. Henckels Twin Cuisine 18-piece set contains a complete assortment of quality kitchen knives and accessories. The set includes: 3-inch vegetable knife (kudamono fine edge), 4-inch parer, 5-inch serrated utility, 6-inch utility knife, 7-inch hollow edge santoku, 8-inch chef's knife, 8-inch bread knife, 9-inch steel, Twin L kitchen shears, a jumbo walnut block and 8-steak knives. Twin Cuisine is the first quality forged knife to combine the comfort of a truly ergonomic, molded handle with the precision weight and balance of a full horizontal tang. Forged from a single piece of Henckels exclusive high carbon, no-stain steel, Twin Cuisine knives consist of quality through the full length of the knife. Made in Germany.

Amazon.com Review
This set supplies a cook with just about every cutting edge, all stored on the countertop. It consists of seven kitchen knives (2-3/4-inch peeler, 2-3/4-inch paring knife, 8-inch chef's knife, 4-inch utility knife, 5-inch serrated knife, 5-inch Santoku, 8-inch bread knife), eight steak knives, kitchen shears, a sharpening steel, and a heavy wood block with slots for everything, plus two extra slots. It also includes a bonus Zwilling cookbook CD. Classic three-rivet handles distinguish Pro S from the company's other quality knives. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, which the small-handed might appreciate. Like other top-grade Henckels knives (except for the fully forged paring knife), Pro S blades are formed by a high-tech welding process that combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics. Traditionalists might insist on single-piece forging for strength, but Henckels says the invisible welds are stronger than the steel. --Fred Brack

Customer Reviews

A Cutlery Enthusiast5
First of all Henckels is one of the best Cutlery Companies around. Chef's (although I'm not a Professional one) attest to their longevity and quality. The Pro S Series comes highly rated by Consumer Reports, even higher than the Henckels' Four Star and Five Star sets. This 18-Piece set is very similar to the popular 9-Piece set, but also has a set of 8 Steak Knives to boot. If you want to keep your steak knives in a neat and orderly block along with your other knives, then this is the set for you.

Read below to get all the details on the SCT Forging Process:

The Professional "S" and Five Star are the very best. Pro "S" offers a classic triple riveted handle while the new Five Star line offers a superb ergonomically designed molded handle. All J.A. Henckels knives use the exclusive FRIODUR ice-hardening process which improves blade density to provide a sharper initial edge that can be easily maintained over a long period of time. The smaller knives (6" and under) are made by traditional hot-drop forging. The larger knives are made with Henckel's exclusive S.C.T. process.

You'll find the blades to be more triangular than other German-shaped knives, providing less rock but greater control over the tip. They are high-carbon stainless steel with a rockwell hardness which varies between 52 and 56 depending upon the knife.

The Process of Producing a J.A. Henckels Blade -- S.C.T.

S.C.T.- Sintermetal Component Technology-is an entirely new method of manufacturing where Henckels has married craftsmanship, engineering and technology. The S.C.T. process allows Henckels to use the optimum steel alloy to create a perfect construction of the three distinct parts of a knife: the edge, the bolster, and the tang.

First, the edge needs great hardness for cutting performance and durability. The bolster needs a steel ideal for stain resistance, performance, shape and of course, great strength. Then the tang needs yet another steel, one that provides excellent stain and corrosion resistance.

Because the traditionally manufactured knives are made of one piece of steel, compromise is always built in, no matter how carefully the alloy is developed. For example, a steel with good cutting power often does not have the optimum resistance to stain or corrosion.

With the S.C.T. process, there is no longer a need for compromise, instead the knife incorporates three optimized steels for edge, bolster and tang.

Superbly sharp and well-balanced5
I have used my new knives for about a week now and am extremely impressed with how easily they but through whatever I'm trying to cut through, and how perfectly they feel in my hand. Their weight, and extreme sharpness, allow you to exert very little effort in slicing through food. I compared them side-by-side to my other store-bought set of knives, and even after using the sharpening steel on the old set, I just couldn't achieve anywhere near the same degree of razor-sharpness as have the Henckels. Not that it matters to me, but the 8 steak knives are stamped, rather than forged, but they are still extremely sharp none the less. Unfortunately, however, the knives do not comes with any care instructions, nor instructions as to how to use the sharpening steel. It took some Internet research and some practice on my old knives to begin to feel comfortable sharpening these. In any case, you can't go wrong, albeit the price is pretty high for this set of knives.

Almost Perfection . . .5
The primary knives included in this set are quite simply THE BEST you can buy, they are well weighted, balanced and hold an edge longer than any I've ever owned. The one and only drawback to this set is the steak knives, they are NOT Pro S, they are the lower Henckels line 'Gourmet'.

Customer Reviews

Excellent set, but I'd buy the 16-piece set4
My wife and I have been using this 13-piece set of Forged Synergy knives for about 8 months, and we couldn't be happier with them. They are well made, well-balanced, have beautiful handles, a nice finish, and hold a very sharp edge--we've sliced tomatoes with all of them. If you're buying your first set of fine knives, these WILL hold up to the Henckels reputation for quality.

Now regarding what some others have said, I'll just add my two cents. There is a "Forged Synergy" and a "Fine Edge Synergy" series, and the main kitchen knives in those sets are NOT the same (though the steak knives appear to be so). The forged series has a metal tine that runs all the way through the handle with the black grips riveted on. The J.A. Henckels International Fine Edge Synergy 13-Piece Block Set is totally different--see the Amazon photos and descriptions for yourself. Yes, this Forged Synergy set is also made in China (not Spain or Germany like some of the more expensive Henckels sets), but the quality is still excellent and should far surpass most users' expectations.

Regarding rust spots, we've had none. However, there are two main types of stainless steel: one is harder and slightly less stain resistant; the other is more stain resistant but slightly softer. That means that you give up a little stain resistance to have a knife that holds a sharper edge longer. I think that's much more important than having to clean an occasional rust spot off if it were to occur.

There are only two minor faults I find with this set (that didn't stop me from buying it, however). The kitchen shears are excellent quality and cut great, but the two parts should be easily separable for cleaning purposes. You'll see this in newer shear designs, and it's not a feature that would add to the cost. Also, the black finished knife block will eventually show wear and tear from missing when inserting knives into the slots. I'd have prefered a standard maple block. Lastly, for a few dollars more, I'd recommend the 16-piece version of this set which includes three more knives for about the price of one more (J.A. Henckels International Forged Synergy 16-Piece Knife Set).

Good Knife Set5
I've worked in professional kitchens in my youth, so I know good knives and what to expect from them. My wife and I received these as a wedding present after registering for them, and though we've only had them 6 months so far they have been awesome. The knives do fit in the block just fine, contrary to what I read in another review. They have not rusted, also contrary to what I've read. The have a great balance on the blade, they handle extremely well, and they hold their edge for a long time before needing sharpening. The only complaint I would have about the set is that it didn't include every knife I could ever need, but the block does have extra slots in it and that's why I'm looking at Amazon.com today - to add some more knives to the set. I would suggest picking up a bread knife at the same time you get the set, it only has a short serrated utility knife in it. Otherwise, I would highly recommend this set.

Distinguished by 18/10 stainless-steel, satin-finish handles, Twin Select knives embody Henckels's world-renowned craftsmanship. The set consists of an 8-inch chef's knife, an 8-inch serrated bread knife, an 8-inch carving knife, a 4-inch paring knife, a 6-inch utility knife, a 10-inch sharpening steel, and a heavy wood storage block with a black-granite finish that handsomely sets off the stainless-steel knives. The block holds all five knives and the steel, and has four more knife slots as well as a slot for kitchen shears. Though the knives are dishwasher-safe, they should be hand washed to protect edges. The entire set carries a lifetime warranty against defects.

Cutting Away5
I orginally purchased the Twin Star Plus but it was a real disappointment. Would not stay sharp and kept returning them-finally had enough and went for the Twin Select. Best choice-the best knifes we have ever owned! Worth every penney we spent! They do an incredible job and feel perfect in your hand. The Henckel Company truly stands behind their product and only want their cutomers to be happy. It's such a pleasure to have good knifes that do a beautiful job - you will never be disappointed with this choice. From a very satisfied customer !!

The best balanced knives around5
These knives feel so natural in your hand that you might as well be Wolverine from the X-men (OK, they feel supernatural). Each of the knives is very sharp, holds an edge brilliantly, and is a pleasure to hold in your hand. The brushed stainless finish of the handles is really handsome and would fit in any kitchen. The knives are a real pleasure to use.

henckels brand with Global design.5
Henckels have done a great job with this. The knife storage block along with the overall design is similar to the well known japanese knife brand named Global.

what I like about this is that it shows that Henckels have caught on to customers needs and wants. It has developed a very modern design and incorporated it into their superbe quality knives to give you the ultimate in design and craftsmanship.

For the price you get Global looks with Henckel quality and reputation what more can you ask for?

Henckels "Forged Synergy" Knives5
The prior reviewer must be rating a different model of Henckels knives than the "Forged Synergy." These knives are the second best I have ever used, second only to Henckels Pro and Gourmet knives which are 2-5X the cost of Forged Synergy. Possibly the other reviewer meant to review Henckels "Fine Edge Synergy" knives which are a much lesser quality that I would not suggest buying. If you are a home cook/chef, these are more knife than you will ever need.

Excellent, will far surpass most users' expectations4
This is a variation of my review of the J.A. Henckels International Forged Synergy 13-Piece Knife Set. But this 16-piece set is the one I'd recommend, so here goes... And usually, rust spots come from cheap kitchen gadgets whose rust sticks to the stainless--not that the stainless itself is rusting.

Lastly, for a few dollars more, I recommend the 16-piece version of this set over the 13-piece set because you get three more knives for about the price of one more.

Perfect for Your Inner Chef4
Bought these as a gift for a woman who is an amazing and creative cook. She loves them and has nothing but praise for their quality. Not being able to afford the $200-300 professional sets, these knives are perfect for the talented and creative cook in you.

Great Value! Great knives!5
I have had this 13 piece knife set for over a month now. The knives arrived very sharp and I have found that they hold the edge very well. Using the sharpening tool that comes with it does the job if you follow the directions and method of sharpening that they recommend. It is nice to have the knives and scissors in one location, at my fingertips. I highly recommend this set.

Impressive quality5
Impressive quality - the blocked set even includes a sharpener so knives never dull. My family loves this product!

  • Stamped, stainless-steel micro-serrated blades
  • Three-rivet polypropylene handles with full tangs

Amazon.com Review
The eight large, sturdy knives in this knife-and-block set easily slice a thick sirloin steak, a lamb chop, or a pork roast into bite-size pieces and provide the hefty feel suitable for diners with hearty appetites. The 4-1/2-inch blades have serrated edges, so they tend to tear meat fibers rather than slice precisely through them, although their microserrations are finer than most serrated steak knives. Fine serrations mean they stay sharper longer. The handles on these knives are classic three-rivet style with full tangs.

Great Set5
I hesitated to buy these because the press was so good.
All the really good knief sets are expensive aren't they? In a word NO!
These are great.
Sharp, they seem to be holding the edge, diswasher safe so far, and
they look good to.
I may buy a second set, I use these for every thing from cutting pbj to
the toughest cuts of meat.

One of our best wedding gifts5
I don't know anything about cutlery and my wife knew a little; so when we received this knife set as a wedding gift, we were kind of "Oh. How nice." We just figured we could make do with our old set, and that this gift was sort of gratuitous. We we ever wrong. Little did we realize how absolutely essential the Henckels International Eversharp Pro 9-Piece Steak Knife Block Set would be.

The knives are smooth-cutting and precise. The grips are extremely comfortable, and, so far, we've had no problem with the dishwashing. They are very durable and have not gone the slightest bit dull. This would make an ideal set for anyone's kitchen. (It makes a great wedding present too!)

Very Satisfied5
I got these as part of our wedding registry here on Amazon.

When I was selecting steak knives, I immediately went to Henckels for a trusted name. When I saw the price on these knives I was weary and when I saw the initial price, I thought that Amazon was just able to get a good price on these. I read that they came from Japan but hoped that Henckles would not put their stamp on a product they don't approve.

I am so satisfied with the product, extrememly shard, nice handles, and the block is very nice as well.

We're regular steak eaters and so far, new york steak, lamb chops, and ribs have been no contest for these knives.

Customer Reviews

A bargain from J.A. Henckels, but read the specs!4
This J.A. Henckels 8 Piece Stylus Block Set is a decent set at an excellent price, but do read the specs carefully before you order so that you're not surprised. This set has a modern appearance due to the stainless steel handles, and those have a nice ergonomic feel. But these are not the "Made in Solingen, Germany" like the Four Star, Five Star, Pro "S" (and others), which are forged from a single piece of high-carbon stainless steel. These knives are made in China from stamped stainless steel, as indicated in the specs.

An explanation: J.A. Henckels has two distinct brands. The "Zwilling J.A. Henckels" brand is known as "The Premium Brand," with products that are mainly made in Germany (mostly forged blades) or Spain (for mid-range knives, forged or stamped). The "J.A. Henckels International" brand is "The Value Brand" division that produces less costly, mostly stamped blade knives, often made in China or Taiwan.

If you're looking for some top-of-the line German-made knives from J.A. Henckels, check out the J.A. Henckels Twin Four Star Cutlery, or perhaps the J.A. Henckels Twin Signature 7-Piece Knife Block Set.

Please understand that this is not a put down on this J.A. Henckels 8 Piece Stylus Block Set, which in some ways is better than some other knives crafted in Germany, for the Henckels quality is still there. Just don't be surprised to see the blades marked "Made in China."

Great deal for the price.4
I paid $69.95 for this set on another web site, but for the price it is a very good set. I would rate this set in the middle of various J.A. Henckels knife sets.

They have stamped blades, not forged, but do the job, as long as you keep them sharpened. The set also looks good on our black granite kitchen counter top. I recommend hand washing after each use.

This set was made in China, not Germany, but the quality, for the price, is there. If you have the chance to buy this set for $70.00, or less, you will get your monies worth. I would also advise buying a good knife sharpener, because these knives do get dull after a few weeks of use.

great value so far5
I have only used these knives once so far, so I cannot speak to their durability, but I am impressed. Some people may prefer some forged blades from another name brand, Henckels' premium line, but for the price, this set includes everything anyone would need to start a collection.

If you are concerned about the handles being too slick, they are meaty enough to fill your hand and I have not had any trouble holding on. Just be sure to keep them clean, honed, and sharp and they will melt through even the most stringy chicken breast.

Amazon.com Review
At the less expensive end of the Henckels International line’s price range, the Everedge Plus collection features lightweight cutlery with micro-serrated blades that never need sharpening. The difference between the Plus collection and regular Everedge knives lies in the handles. Formed of contoured, almost cushy santoprene instead of polypropylene, Plus handles are handsomely-backed with brushed stainless steel for added leverage and a sleek, contemporary look. Ideal for a student apartment or vacation rental, this 13-piece set includes: a 2-3/4-inch paring knife, 6-inch utility knife, 8-inch chef's knife, 8-inch bread knife, 5-1/2-inch boning knife, 5-inch tomato knife, 6 4-1/2-inch steak knives, and a graphite-painted storage block.

wonderful and reasonably priced5
When I set up my wedding registry, I knew nothing about knives and registered for the least expensive set they had at the store. I realize now that knives are one of those things where you get what you pay for. Knowing that, I'm genuinely surprised by how low the price is for these knives. We bought this set last week and it is a huge improvement. It's not professional quality but it's more than enough for the average cook. The knives cut like a dream and the handles are very comfortable. I love the santoprene - it's very similar to the OXO tools that the rest of my kitchen is stocked with; in fact these handles are a perfect match with the OXO SteeL collection. The steak knives look fabulous with my flatware, too, which is always a plus. Two thumbs up.

Knives3
I like the design of the knives. They just are not sharp. I have to push down real hard for them to cut anything.

Customer Reviews

great purchase for the price4
i just got this set for my new apartment, and overall, i'm really happy with it. the knives are very sharp, ergonomically well designed, and look pretty on the counter. that being said, you should know that this set is not one of the higher quality henckels sets - a fact betrayed by the price. they are very light and somewhat delicate, so a bit difficult to weild with control, and poorly suited to cutting through tougher material such as bones. of course, some may find light knives convenient, but i would have preferred heavier blades and handles, especially on the bigger knives. the santoku knife was the most disappointing because it was thin and very light. the rest are fine as they are, and cut with great precision, especially given the price. there are a few of extra slots in the block, which, while strange, came in handy for my old homeless knives. also, the set pretty muuch covers the range of needs and preferences for cutting absolutely anything (except bone-in chicken/fish, since the knives are a bit delicate). if you're not looking for a lifetime keeper set, then this is a great set for you. i really love mine, and plan on keeping it until i can splurge on a $$$$ set.

An experiment gone right...4
About six months ago, I was walking through the discount knife section of a local department store when I saw this line's santoku and vegetable petty knife on sale for $20. In the world of cutlery, $20 is nothing, so I bought them just to see what it was like. It quickly became one of my favorite knives in my kitchen. The factory cutting edge is a little lame and overall the line feels too light to do much heavy cutting work (i.e. frozen meats, chicken bones, or thick vegetables). On a positive note, with some time and love, the edge can be ground down to be extremely sharp (enough so that I use it to cut tuna for sushi in my restaurant). Like any knife that I like, I take it to my restaurants kitchen and try it out to see how many days it can go before I need to regrind the edge. Surprisingly, it held up for an entire week without needing to be resharpened. In short, for the money, you would be hard-pressed to find a better knife.

Good buy for the money5
I've had these knives for several weeks now and have to say I'm impressed. I did quite alot of searching before settling on these-and I'm glad I did. The quality is excellent, they are sharp and easy to use, and the set-though there are a few empty slots to add to it later-came with every type of knife I need. I pride myself in my cooking-I make everything possible from scratch and cook several meals a day, and I can't imagine a scenario where I'd say "if I only had another knife".

I see myself getting many years of use out of these. They come with a rod sharpener so that I never have to see them dull, or send them in anywhere to be sharpened. The block is sturdy and looks good with my kitchen decor.

I was leaning toward cutco brand before I decided on these, but I just couldn't justify the price of cutco. I'm not disappointed, I think I got more than my money's worth out of these.

One thing I have to add about other reviews I read before I bought these....I almost didn't get these because so many people complained until I saw that most negative comments were about the rust factor. ANY chef's quality knife is going to rust if you don't take care of it, it's actually a sign of the type of metal that good knives are made of.
If you are looking for a set of knives that you can throw haphazardly into the dishwasher, or leave lying around in the sink-these are not for you!!!

These must be hand washed after use and dried completely by hand with a cloth-that's why you see professional cooks constantly wiping their knives on an apron or towel as they work.
For best results, you're going to have to sharpen these about every half dozen uses, especially if you are cutting something like tomatoes-world's worst wear on any knife-of if you're cutting board is made of anything besides wood. It doesn't hurt them to sharpen them as needed, and better safe than sorry-a dull knife is a dangerous knife.

J.A. Henckels International Fine Edge Synergy 13-Piece Block Set

Product Description

Fine Edge Synergy 13-piece block set includes: 2.75-inch paring, 6-inch utility, 5.5-inch boning, 8-inch bread, 8-inch chef's knives. Hardwood block, 9-inch sharpening steel and 6 steak knives 4.5-inches

Amazon.com Review
Henckels’s International line offers affordable cutlery from one of the world’s most renowned knife manufacturers. A great value for a novice cook, this 13-piece set contains the following: 2-3/4-inch paring knife, 6-inch utility knife, 8-inch chef's knife, 8-inch bread knife, 5-1/2-inch boning knife, six 4-1/2-inch steak knives, 9-inch sharpening steel, and a graphite-painted storage block. Formed of contoured, almost cushy santoprene, the handles are handsomely-backed with brushed stainless steel for added leverage and a sleek, contemporary look.

Fine Edge Synergy knives are constructed of stamped German stainless steel with hand-honed blades that can be resharpened (unlike the company’s Everedge knives that have identical handles but micro-serrated edges). The molded handles are quite comfortable and resist breakage, and the full-tang blades slice and chop with ease. All the pieces store in the included graphite-painted wood block. Made in China, the cutlery is dishwasher-safe yet best washed and dried by hand. A lifetime warranty applies. --Ann Bieri

A Fine (Edged) Set4
This was a gift from our wedding registry. And I did read the less than impressive reviews of the set and yet decided to go with it - 1) because of the price, (2) these received the relatively better reviews for a Henckels set (3) one-piece stamped steel construction. My husband was in the restaurant suply business for 7 years, and he is no fan of the Henckels International line but I succumbed to the draw of the little man (in the co. logo) without whom, I believe for the moment, no kitchen is complete. Since we received them, even my skeptical husband has gotten fond of them. They are not 'cheap looking', 'prone to rusting' (with proper knife handling, of course), 'thin blade'd, as some have opined here. We don't have a grand chef's kitchen operation running at our house and for us, these are great. With low to moderate use, regular hand cleaning and wiping down, they are still like new. They feel just right in terms of weight and look great. We have an extra pair of henckels kitchen shears that we were able to put in the block that had a compartment for it.

Great Knives5
I was looking for a set of good quality knives as I am upgrading my kitchen equipment and I ran across these in Dillards Dept store. The knives were on sale so I was not sure about them. I was familiar with the brand but didn't know much. I purchased them and they are wonderful! The Chef's knife won't disappoint and I was upset that I had not gotten a set of good knives before it would make my cooking life so much easier. The knives look pretty too with my stainless steel. They are attractive. The blades are so sharp and the steak knives cut steak like it's butter. I recommend them to anyone looking for a nice set of cutlery.

Best knives I have had5
This is my first brand-name knife set purchase. The knives are all very sharp, the grip is comfortable, and the whole set appears to be of good build quality, so I expect it to last for a while. For less than $50, it is a good buy.

J.A. Henckels Twin Signature Stainless-Steel 11-Piece Knife Set with Block

Product Description

J.A. Henckels Twin Signature 11pc Block Set contains the following: 2 1/2-inch Peeler, 4-inch Parer, 5-inch Serrated Utility, 6-inch Utility, 8-inch Chef's, 7-inch Hollow Edge Santoku, 8-inch Bread, 4 1/2-inch Steak, Kitchen Shears, 9-inch Steel, Hardwood Block

Amazon.com Review
This knife block set carries a useful assortment of standard knives for outfitting a kitchen. The set includes a 2-1/2-inch peeling knife, a 4-inch paring knife, a 5-inch serrated utility knife, a 6-inch utility knife, and an 8-inch chef's knife, as well as a 7-inch hollow-edge santoku, an 8-inch bread knife, and a 4-1/2-inch steak knife. A 9-inch sharpening steel keeps their edges in order, and a pair of kitchen shears to snip herbs, flowers, or string is also included. Everything stores neatly in the attractive natural hardwood block.

The knives feature high-carbon, stainless-steel blades that have been stamped from one piece of metal. The edge is cut by laser for a more consistent angle on the blade and hand-honed for sharpness. Blades have also undergone Henckels's Friodur ice-hardening process, which further strengthens them and protects from discoloration. The ergonomically designed traditional-style polymer handles are securely fastened to the balanced full tangs with three rivets. Handles seamlessly encase the tangs on these knives so no food particles can ever become trapped in a gap. Twin Signature knives are all dishwasher-safe (although Henckels recommends washing by hand) and are covered by a lifetime warranty. --Cristina Vaamonde

Customer Reviews

A good set, and a not so bad value either.4
As far as the premium henckels knife sets go, this one is one of the cheaper ones. They were a gift for my mother and a extreme upgrade over the old dull knives she had been beating on for years. Its hard to find a good henckels set (not those henckels international ones) for $200 or less. These knives were about $200 which compared to the top of the line sets from other brands. As a general rule, if I can find what I need from a respected brand, even if its not that brands best product, I will always choose that over something from an inferior brand, at the same price.

Out of the box the high quality of the knives is evident. I was looking for sets with all the knives you could want without wasting money on steak knives. This set is perfect. If your like my mom, and are transitioning from a dull set, be careful! After a few nicks, you will stop underestimating their sharpness.

Unfortunately they tell you not to put them in the dishwasher. I cant blame them for trying to protect their product but I cant say they are going to be washed by hand all the time either.

Knife and block review4
We bought this set as a Christmas gift to ourselves, because the $10 knife set I bought from Wal-Mart years ago was never very good in the first place and we wanted to stop fighting to cut through food.

These knives are fabulous. There is a large variety to choose from, and they all cut through vegetables and meat like butter. I am in love with the knives.

I would have given 5 stars, but the one thing I hate about the set is the pre-fab "one size fits all" knife block. I can't stand it. I would much prefer a block where the slots are cut to the size of the blades. I would suggest if that is a pet peeve of yours as well, to go out and find a new block that you like. We are in the process of doing so ourselves.

Otherwise the set is great. I have always heard great things about Henckels, and knew that they were the knife set I wanted. Upon use, I am glad to find out that they are just as great as I had heard.

Can't go wrong at this price5
I bought these knives for my mother as a gift. She previously had an old set of Chicago Cutlery knives (30+ years) that needed replacement, and after some research, I decided to go with these.

I own a set of Shun knives myself. I've used her old Chicago Cutlery knives a fair bit, as well as many other brands (mostly inexpensive ones). So I've used dirt cheap, to (nearly) top of the line.

My impressions of the knives...

Pro - These knives have a comfortable, well balanced feel to them. They cut well, and they look handsome in the block.

Con - Other than the minor complaint that the block isn't fitted to the set(some holes are too big for the smaller knives), at this price, no other complaints have merit.

Conclusion - I think these knives are a good deal. If you want a good set of knives, and can't/don't want to spend $1000+ on an upscale set... These are definitely worth a look at.
